Blueberry Pancakes
I have never been a big fan of pancakes. It is not a Latino thing to do for breakfast. But this past winter going up state more often, having a beautiful big kitchen to cook in and a great view is when I started enjoying them more and more. Only Blueberry Pancakes! Well it also helps that I can buy organic local blueberries, eggs, butter and milk all so fresh! I love having my Blueberry pancakes with one of my favorites syrups ( Crown Maple Syrup from Dutchess County, NY)
Recipe:
- 1 1/2 cups all‐purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 2 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons of melted butter
- 2 cups of Blueberries
Directions:
- In a large bowl, sift together the flour, baking powder, salt, and sugar. Make a well in the center and pour in the milk, egg, and melted butter: mix until smooth. Heat a lightly buttered frying pan over medium high heat. Pour or scoop the batter onto the pan, making them the size you like. Add a fair amount of blueberries all around you pancake. Brown on both sides and serve hot.
